PAPPA AL POMODORO
The best peeled tomatoes for a quick and easy tomato soup
INGREDIENTS FOR 3 PEOPLE
- 300g Organic peeled tomatoes
- 200g Stale sourdough bread
- 1 Garlic clove
- Basil to taste
- Chili pepper to taste
- Extra virgin olive oil
PREPARATION
Put plenty of oil in the pan and heat up to 60°. Add a clove of crushed garlic, chili, pepper and three basil leaves to flavor the oil. Leave everything to infuse off the stove. In the meantime puree the Organic Whole Peeled Tomatoes and add them to the pan. Mix everything well and turn on the heat.
Gently stir over low heat to mix well the pureed tomatoes with the infusion of oil and herbs. Salt to taste. Cut a few leaves of basil in tiny pieces and add them to the pan. Remove the zest from the stale bread, and cut the bread into cubes. When the tomato begins to boil, add the bread.
Turn gently. The bread will absorb the tomato and crumble until it reaches a creamy consistency. Remove the garlic, garnish with some extra basil leaves and serve.
